A Toast to Tradition and Innovation in Sake Making
In a celebration of Japan's rich culture and its dedication to the art of sake production, haccoba is excited to announce the release of two new unique sake products:
The art of NUKA and
The art of DASHI. These artisan brews are inspired by the collaborative spirit of Takasaki Jo, a celebrated sake expert, and are designed to bring the warming culture of Atsukan (hot sake) to the global stage through the recently published book, '
The Book of ATSUKAN'.
Since its inception in February 2021 by CEO Taisuke Sato, haccoba has stood out for its commitment to reviving the ancient, free-spirited sake brewing traditions of Japan. This ranges from recognizing the days when households across the country freely produced sake to today, where the craft has become more regulated.
At haccoba, we believe that lifting the constraints allows for a vibrant fermentation culture to flourish. This approach is evident in our collaboration with Takasaki, whose book serves not only as a guide for enthusiasts and newcomers alike but also as a call to elevate the Atsukan culture around the world.
Sake with a Story
The
art of NUKA utilizes grains sourced from T-FARM in Akita, featuring the traditionally grown Kame no O rice, which is known for its distinct flavor. Taking a creative approach, we focus on utilizing rice bran (nuka) that is often regarded as a waste product during the polishing process. Instead of discarding this component, we embrace it and experiment with various levels of roasting to enhance the sake's profile. The result is a drink that transforms beautifully when warmed, increasing its flavor complexity and inviting aromas reminiscent of roasted rice.
Meanwhile, the
art of DASHI offers a fascinating exploration of umami—inspired by traditional Japanese broth-making techniques. Here, we take flavors from classic dishes such as
Kozuyu, steeping dried scallops and shiitake mushrooms in a broth that serves as part of the brewing process. This blend brings forth a delicate yet impactful flavor that shines both chilled and warm.
Craftsmanship at Its Core
With a retail price of ¥2,860 per 500ml bottle, these limited-release brews will be available from June 27, 2025, until sold out. They can be purchased directly through our online store at
haccoba.com or at our public market location in Odaka.
The design and naming of these beverages were thoughtfully crafted to appeal to enthusiasts around the world keen on Japanese food culture. Designer Yuta Tsuchiya's work reflects the essence of both bottles, capturing the artistry and techniques celebrated in their respective flavors.
