The star of FOURGRAINS is undoubtedly its signature dish, the "Petite boule de foie gras saveur de cafe 'FOURGRAINS'", manifesting a delightful blend of foie gras shaped into a small ball, enveloped in a coffee-flavored milk jelly, and finished with a coating of coffee jelly. This exquisite creation not only tantalizes the taste buds but also evokes nostalgia, as it is inspired by two renowned preparations from the hotel's rich history:
  • - The "Foie Gras no Momo Tsukuri" from 1985, crafted by Monseigneur Nakamura.
  • - The "Foie Gras no Sote Espresso" created by Chef Iwasaki at Dining & Bar TENQOO, which has been further refined by Chef Eiji Ikeuchi, who now carefully reconstructs and elevates tradition into something new with FOURGRAINS.

The dining hours are from 12:00 PM to 3:00 PM for lunch, with last orders at 1:30 PM, and from 6:00 PM to 9:00 PM for dinner, with last orders at 7:00 PM. His profound experience, accumulated over decades, includes training under Michelin-starred chef Katsuhiro Nakamura and subsequent roles that honed his expertise.

With a vision rooted in culinary excellence, Ikeuchi has steadily risen through the ranks, ultimately becoming the Executive Chef of “TRAIN SUITE Shiki-shima” before assuming leadership as the head chef at FOURGRAINS. His passion for cooking and dedication to the refinement of culinary practices shine through in every dish served.
