Public Technologies Launches New Project
Public Technologies, a GovTech startup, is on the brink of an exciting launch with its new initiative, the "Japan Tokimeki Aging Factory." Scheduled for October 4, 2025, this project aims to celebrate and enhance local products through collaboration with creators and influencers.
The first event will take place at the Okomedoki restaurant in Shibuya, Tokyo, where a beloved staple of Japanese cuisine, the rice onigiri, will be featured. Specifically, the spotlight will be on special "Sake Kasu Rice," a unique variety sourced from Mori Farm in Sukagawa City, Fukushima. Under the leadership of Shigeki Moritoh, this farming entity is celebrated for its dedication to utilizing sake lees in their rice cultivation, resulting in a flavor-rich Koshihikari rice that captures the essence of its terroir.
Event Overview
The "Sake Kasu Rice" onigiri event offers a hands-on experience designed to engage the senses, allowing attendees to sample this rare rice variety before its official launch on the company's e-commerce platform. Guests can enjoy three types of seasoned onigiri, freshly prepared by Chef Yoshiaki Katada in a live kitchen setting.

Unique Culinary Experience
Chef Yoshiaki Katada, raised in Chichibu and armed with diverse culinary experiences from cafes to French and Chinese cuisine, will bring his expertise to this special occasion. He famously recognized the heritage of Japanese onigiri while working in London, and now aims to showcase its elegance back home. His restaurant "NIKON," which means "this very moment," embodies the philosophy of delivering peak flavor experiences through intimate connections between producers and consumers.
About Mori Farm
The Mori Farm, owned by Shigeki Moritoh, has deep agricultural roots in Sukagawa City. With a commitment to sustainability, Shigeki incorporates sake lees back into their fields, nurturing the land while producing high-quality Koshihikari rice. He emphasizes the individuality of each rice grain and transmits the farmers' aspirations in every bite. This dedication has earned their sake kasu rice a prestigious place in notable restaurants, notably in Ginza's "Kaishoku Michiba."
