This delightful treat will be available exclusively on weekends and holidays starting July 18, 2026, and sold at the pathway leading to the historic Jindaiji Temple in Chofu City, Tokyo.
Cultural Inspiration Behind the Treat
The Kaku Daishi Dorayaki is conceptualized by a group of four women in their 50s who underwent systematic re-skilling in food culture at Kyoto University of the Arts. Their aim was to present Jindaiji's longstanding traditions in a way that's both accessible and enjoyable to locals and tourists alike. This collaboration with a 115-year-old traditional wagashi shop ensures that the deep-rooted flavors of the region are enriched by modern sensibilities.
Recognized as a symbol of protection against misfortune, Kaku Daishi is said to have been a renowned monk who transformed his appearance to fend off epidemic diseases during the Heian period. The dorayaki creatively captures his essence—exuding a mix of fear and charm in its adorable design.
The Craftsmanship of Okita
The dorayaki is produced exclusively in collaboration with Okita, a distinguished wagashi shop in Nagasaki. The shop’s fourth-generation owner, Shintaro Okita, infuses his artisanal skills with new, innovative techniques while respecting traditional craftsmanship. The tender, fluffy texture of the dorayaki is a result of integrating Western pastry methods into its preparation. The sweet red bean paste is crafted using large Daidai beans, known for their robust flavor. Careful cooking over two days preserves the beans' integrity and natural sweetness, letting the true essence of the adzuki shine through.
Shintaro Okita himself studied at the very same art program, highlighting the serendipitous intersections of tradition and modern culinary exploration. This project bridges the vibrant heritage of Jindaiji with Nagasaki's craftsmanship.
