Sillage, a modern bistronomy restaurant that marries the rich culinary traditions of Southern France with the exquisite seasonal ingredients of Japan. Open for both lunch and dinner from the outset, this restaurant aims to create a lasting impression through its name, which translates to "the scent of a lingering aroma" in French, encapsulating the hope that patrons will always remember the flavors and joy experienced here.
Chef Kazuki Munesada: The Heart of Sillage
At the helm of Sillage is Chef
Kazuki Munesada, whose impressive culinary journey began at the Kobe Kitano Hotel where he learned classic French cuisine. He honed his craft further at the one-star restaurant
Jérôme Nutile in Nîmes, under the guidance of an M.O.F. (Meilleur Ouvrier de France) chef. Munesada continued to refine his skills at
L'ARGENT in Tokyo, effectively blending French techniques with Japan's seasonal produce.

Each dish at Sillage encapsulates the essence of the changing seasons, incorporating fermentation techniques to enhance flavors and create depth. For instance, one dish planned for dinner features five types of mushrooms, including locally fermented maitake mushrooms that impart rich umami and a subtle acidity, exemplifying the restaurant’s philosophy.
Desserts take center stage with a vibrant dish adorned with edible flowers sourced from trusted organic farms in Okayama, showcasing colorful petals in a beautiful contrast that artfully reflects the season.

Sillage serves lunch and dinner with an emphasis on freedom of choice. Diners can choose between a two-course meal for lunch or the option for a more elaborate three-course experience. Special opening promotions from October 3 to October 19 will allow guests to savor the three-course lunch at a reduced price of ¥4,400 and experience the flagship seven-course dinner for a special price.
Dinner options include two distinctive courses: the
Sillage flagship at ¥12,100 and the lighter
Saison option at ¥7,700. Guests are welcome to enjoy the casual atmosphere, whether they stop by for a single glass of wine, share appetizers with friends, or indulge in a full dinner like a traditional bistro experience.
Lunch options reflect authentic French style, allowing guests to mix and match appetizers, main courses, and desserts for a true taste of France without the pretense.
Crafted with Care: Bread and Wine Selection
Sillage takes pride in its selection of natural wines, sourced with the guidance of the passionate chef and sommelier, combining wines from local producers met during Munesada's journeys through Southern France. Additionally, signature house-made
campagne bread is baked daily using Hokkaido's Kita no Kaori flour, ensuring an irresistible crust and soft interior. The sustainable vegetable paste that accompanies the bread is crafted from uniquely shaped produce that has been fermented, enhancing flavor and aroma in an environmentally considerate manner.
