Founded in 1974 by a former sumo wrestler, Chanko Edosawa has maintained a commitment to delivering authentic sumo-style nabe (hot pot) dishes. The restaurant prides itself on using high-quality “old chicken” for its unique broth, revered for its deep flavor and nutritional benefits, accentuated by a perfectly balanced soy sauce, miso, and salt-based seasoning.
Three Core Principles:

Chicken Soup Nabe (鶏ソップ鍋)
- Historically, sumo wrestlers avoided four-legged animals as a superstition believed to bring bad luck, opting instead for chicken, which was considered auspicious. Edosawa’s nabe captures this tradition by using whole, high-quality chicken simmered for a rich broth.
