For the first phase of the plan, running from March 1 to April 7, diners can indulge in a special kaiseki dinner themed around the stunning cherry blossoms that grace the region. The meal begins with an appetizer presented in a flower viewing box featuring seasonal delights such as bamboo shoots dressed with wild seed sprouts, sakura shrimp, and refined tofu with cherry flower flavors. Each dish is crafted to visually represent the ethereal beauty of cherry blossoms.
Diners will also experience expertly arranged sashimi showcasing the season's freshest catch, alongside grilled fish delicately cooked with sakura leaves, and abalone steamed with cherry blossom essence. To round off this splendid culinary journey, enjoy the "Sakura Soba" featuring two types of noodles modeled after cherry blossoms. This spring, Laforet Ito Onsen truly invites guests to immerse their senses in the sights and flavors of sakura.
Arrival of Fresh Greenery
Following this period, from April 8 onward, guests will be treated to a different spring narrative with the "Tea and Fresh Greenery Kaiseki," showcasing the lush transformation of Ito through local tea flavors. This menu includes beautifully arranged appetizers reminiscent of a tea party, sashimi paired with fragrant tea infusions, and dishes such as freshwater fish delicately prepared with tea and served alongside local green tea hot pot. Here, the regional specialty "Guri-cha" is used beautifully to enhance a delightful shabu-shabu experience.
