This culinary experience, featuring the finest seasonal ingredients from Japan, transports diners to the enchanting flavors of Southern France.
The mastermind behind this exquisite menu is Chef Ryūji Shida, who passionately curates each dish to celebrate the vibrant tastes of summer. 'I want our guests to experience the power of these ingredients and feel the essence of summer through our cuisine,' says Chef Shida. This seasonal course promises to be a true delight for the senses.
The culinary journey begins with a signature dish inspired by Monaco, where refreshing lemon and vanilla jelly is enhanced by the aromatic essences of basil and fennel. It's a delightful start that sets the tone for the meal.
Next, guests will enjoy an appetizer featuring the delicate white silk whiting sourced from Miura, Kanagawa. The dish combines roasted eggplant and bell peppers with shiso leaves, presenting a uniquely Japanese summer take on Robuchon’s culinary style.
For the warm appetizer, diners will be treated to squid from Hagi, Yamaguchi, lightly grilled to bring out its sweetness, paired with a regional dish from Provence: artichoke Barigoule.
The main fish course features the flavorful sweetfish, which is seared to perfection, accompanied by a rich fish soup sauce and a colorful tians of tomato and zucchini that add texture and vibrancy.
As the centerpiece of the meal, the Auvergne-style lamb from Sisteron is offered as the main dish. Praised for its tender texture, the lamb is served with creamy potato purée and a pastoral salad, making it a standout feature of the summer menu.
To transition to dessert, an avant dessert of tangy apricot sorbet layered with airy coconut cream provides a gentle sweetness and refreshing acidity, perfectly suited for the warm weather.
The grand dessert is a playful creation resembling cherries, filled with sweet and sour cherry sauce, accompanied by a delightful pistachio ice cream that highlights the seasonal fruits in an artistic manner.
