The restaurant exclusively sources its beef from Yokohama's renowned butcher shop, "Yokohama Nomoto," where only female, aged wagyu is selected. Each cut of meat exhibits its individual characteristics, allowing for optimal aging and cooking techniques that emphasize the rich umami of the lean meat alongside the distinct flavor of the marbled fat.
