A New Era of Soba Dining in Yokohama
On July 18, 2026, a unique new brand named
'Tamotsu' will officially open its doors at the
Kohoku Minamo shopping complex in Yokohama. This exciting venture brings the traditional Japanese dish of
ten-soba to the forefront, allowing a broader audience to indulge in the rich taste and aroma of pure buckwheat noodles.
Introducing Tamotsu
'Tamotsu' was created to bring the authentic experience of
ten-soba closer to everyday dining. The essence of ten-soba lies in its ability to highlight the unadulterated flavors of buckwheat, but many perceive it as an exclusive dish meant for fine dining. This new brand aims to eliminate that barrier, making it accessible for a variety of settings—be it a quick meal after shopping or a family dinner.
The vision for 'Tamotsu' is rooted in the aspirations of its strategic advisor,
Takafumi Horie, a well-known figure in the culinary world, who aims to craft a truly delicious soba experience. The project is further enriched by the participation of the esteemed
Shusaku Toba, owner and chef of the renowned restaurant
Sio. Toba-sensei’s distinctive
chicken soba will be among the signature offerings at 'Tamotsu'.
