This delicious new offering has been carefully crafted by the hotel’s chefs and staff, combining the authentic flavors of menma with a unique jerky-like texture.
What is Bamboo Jerky?
Bamboo Jerky is created using high-quality menma, which is traditionally made from bamboo shoots. The hotel’s chefs season and dry the menma, transforming it into a snack that’s crispy yet rich in flavor. With each bite, you can enjoy the natural sweetness and umami of the bamboo, complemented by expertly crafted seasonings. This makes it an excellent choice not only as an appetizer with drinks but also as a light snack for when you're hungry.
The Art of Making Menma
The menma used for Bamboo Jerky is crafted from start to finish by the hotel’s staff, representing the essence of “ultimate hotel-made.” Every step, from harvesting to processing and flavoring the bamboo, is performed with care and dedication.
Harvesting Young Bamboo
In the mountains of Awa District in Chiba, hotel staff meticulously harvest young bamboo shoots, which are ideally between 1.5 to 2 meters tall. Each shoot weighs around 10 kilograms, and harvesting them from steep slopes is quite labor-intensive. The staff ensure they do not miss the limited harvest season from early April to mid-May, treating each shoot with utmost care.
Preparing the Bamboo Shoots
Once harvested, the bamboo must maintain its freshness. It is immediately transported to the factory, where it is carefully split in half with a chef's knife, and the hard outer skin is removed. Even for experienced chefs, this labor-intensive task can lead to blisters due to the toughness of the bamboo.
Boiling and Fermenting
The cut bamboo is then boiled in a massive rotating pot and pickled with salt over the course of about a month. Afterward, the excess salt is removed, and lactic acid bacteria are added to initiate the fermentation process, resulting in the delectable product known as menma.
Final Drying and Seasoning
After fermentation, the menma is cut to a convenient size, dried slowly to perfect its texture, and seasoned by the hotel's chefs before undergoing another drying phase. This meticulous process culminates in the creation of the flavorful Bamboo Jerky, packed with concentrated taste.
