Introducing Rice Flour Sanuki Udon: A Gluten-Free Delight for Everyone!

A New Choice for Japanese Dining: Rice Flour Sanuki Udon

In an exciting development for food lovers, especially those with dietary restrictions, Rice Flour Sanuki Udon is set to hit the shelves in Japan, starting November 1, 2025. Developed in Kagawa, the heart of udon cuisine, this gluten-free version of the beloved Sanuki udon has already won the hearts of over 10,000 diners, and its launch is eagerly anticipated.

The idea for this innovative product came from the founders of By Age 18, a restaurant that opened its doors in 2023. It was established with a mission to provide delicious udon to everyone, especially those who are unable to enjoy traditional wheat udon due to gluten allergies or sensitivities. The unique selling point? A delightful rice flour noodle that retains the essential characteristics of traditional udon—making it suitable for all customers, regardless of their dietary needs.

A Commitment to Inclusivity

The journey towards creating this udon began more than four years ago when Mr. Moriro Murakami recognized the challenges his son faced due to food allergies. His frustration fueled a passion to create a dish that everyone could enjoy. The team behind Rice Flour Sanuki Udon focused not only on those with allergies but also on a growing number of people who are becoming more aware of gluten intolerances in their daily diets. In Japan alone, many individuals reportedly face gluten sensitivities, which is a significant consideration for the future of dining.

Informed by their experiences at By Age 18, they realized that the desire for gluten-free options transcends just those with allergies. Families and partners often find themselves seeking dishes that everyone can enjoy, highlighting the need for more versatile dining solutions.

A Social Impact through Rice Flour Noodles

Currently, the production of rice flour noodles is minimal, but as the Japanese food landscape evolves, the introduction of rice flour noodles presents a new and necessary option. The goal is to capture 3% of the wheat noodle market with rice flour alternatives, sparking a rice noodle trend throughout Japan. This initiative not only addresses dietary diversity but also contributes positively to Japan's food self-sufficiency.

Not Just Any Udon: Unique Characteristics of Rice Flour Sanuki Udon

What makes this rice flour udon stand out? Here are some features:

1. Kagawa Origin: As a dish born from the ethos of Kagawa, this udon is not just about being 'edible,' but about being delicious for everyone, including those who are gluten intolerant.

2. Authentic Texture: Utilizing carefully selected domestic rice flour, the noodle recreates the essence of traditional Sanuki udon with its characteristic firmness, thickness, and elasticity, combined with a delightful chewy texture.

3. 100% Gluten-Free: Safety and quality are paramount; thus, the manufacturing process ensures total exclusion of wheat flour. A dedicated rice flour noodle facility guarantees that these noodles are produced without the risk of cross-contamination.
