On July 18th, Tsukiji Gindako, under the management of Hotland Holdings, is excited to announce the launch of a limited-time offering: the Premium Yuzu Negi Mentaiko. This seasonal dish will be available at most Tsukiji Gindako locations across Japan, combining traditional flavors with innovative ingredients from renowned mentaiko producer Yamaya.

The Premium Yuzu Negi Mentaiko Experience


This newest addition to the Premium Mentaiko Series is the result of a collaboration with Yamaya, famous for their exquisite mentaiko. The mentaiko used in this dish is aged to perfection for 168 hours (seven days) in Yamaya's secret sauce, the 'Takumi no tare.' This meticulous process intensifies the flavor of each individual grain of mentaiko, resulting in a robust and savory delight that pairs perfectly with Tsukiji Gindako's takoyaki.

The Yuzu Negi Mentaiko features a special sauce blended to create the perfect harmony with takoyaki. It is enhanced with crispy Kujo green onions, adding texture and aroma, while the dish is finished with a sprinkling of white sesame and cut nori for extra flavor. Moreover, a separate pouch of 'special yuzu sauce' is included for a refreshing finish right before serving.

When drizzled onto the hot takoyaki, the 'special yuzu sauce' releases the crisp citrus notes of the 'Kito yuzu' from Tokushima, elevating the overall experience with its elegant fragrance and zest.
