The Birth of Air-Brewed Sake
In a remarkable innovation, AquaM Co., based in Shibuya, Tokyo, has teamed up with Yoji Terasawa, the master brewer of Tokyo Port Brewery, to launch
Edo Kaijo Air-Brewed Sake, the world's first sake made from water generated from air. This unique development is a significant leap toward sustainable practices in alcohol production.
Revolutionizing Sake Production
AquaM has developed a proprietary technology that extracts moisture from the air to create water. Their air-water generating device, the
Air Drip Water AQ-20XR, allows for the production of high-quality water regardless of the availability of traditional water sources such as rivers or aquifers. By utilizing this innovative water source, they demonstrate a commitment to reducing environmental impact while still crafting exceptional sake.
Terasawa, who operates the only sake brewery in the bustling metropolis of Tokyo, specifically in the Minato area, has become a pioneer in microbrewing. His unique establishment, located in a reinforced concrete building, maintains precise temperature controls to ensure each brew meets a high standard of quality. By partnering with AquaM, Terasawa is helping to blend traditional brewing methods with cutting-edge technology.
The
Edo Kaijo Sake, produced using
Yamada Nishiki rice from Hyogo Prefecture and Yeast No. 901, is an emblem of their collaborative effort. While preserving established brewing techniques passed down through generations, the duo aims for the final product to be not only delightful to the palate but also a testimony to creative innovation.
Promoting a Sustainable Future
By producing sake with water derived from the air, AquaM and Tokyo Port Brewery address significant societal issues, such as the need for sustainable water resources and the challenges posed by existing water supply infrastructures. The clarity and purity of the air-generated water contribute to a sake experience devoid of unpleasant aftertastes, highlighting their commitment to quality.
In addition to offering a refreshing alcoholic beverage, the collaboration presents a potential solution to global water scarcity. With its air-derived water, the sake represents a hopeful example of how to tackle water-related issues while remaining rooted in Japanese tradition.
