This new addition—
Creamy Basque Cheesecake—takes inspiration from the traditional Basque cheesecake after a visit by its founder, Chef Santos Antoine, to the Basque region in Spain. Traditionally, Basque cheesecakes are known for their richly burnt top, but CRIOLLO has chosen a lighter approach. By not overly charring the top, they aim to preserve the cheesecake's silky texture and enhance the natural flavors of the ingredients, resulting in what they describe as a unique CRIOLLO version of this beloved dessert.
The cheesecake features a sophisticated baked color with subdued char marks, making it appealing across generations. This delicacy is perfect for gifting or sharing on various occasions, thanks to its mild sweetness and light texture. It can be enjoyed during tea time or savored as a delightful finish after dinner. The delectable cake is priced at ¥2,600 (tax included) and will be available at all CRIOLLO locations and online from May 24, 2025.
