Understanding High-Pressure Processing (HPP)
High-pressure processing is an innovative and natural cold pasteurization technique that utilizes extreme water pressure—up to 87,000 psi—to eliminate harmful pathogens in food products. The recently installed Hiperbaric 525i system highlights advanced technology with a sizable 525-liter vessel capacity. This system boasts an impressive processing capability of approximately 8,030 pounds per hour and operates at a speed of 10.7 cycles per hour. A unique feature of the 525i is its independent intensifiers, enabling users to conduct safe maintenance and inspection without halting production.
