Using traditional techniques that date back to Roman times, salt has been harvested in this area for centuries. The unique climate, characterized by low rainfall and ample sunshine, allows for a natural concentration process during spring and summer, where skilled artisans hand-harvest salt crystals that surface on salt pans.
What sets Camargue salt apart is its stunning appearance; as the salinity of the pools intensifies before harvest, a species of microalgae called Dunaliella proliferates, imparting a beautiful orange-pink hue to the water.
