Following the successful reception of its previous editions, this third installment explores the rich flavors of traditional Japanese seasonings: soy sauce and miso. These ingredients have been artfully transformed into delicate cookies, offering not only sweetness but also a delightful savory contrast. The Unique Flavors of WAKO Cookies
WAKO Cookie vol.3 features two compelling flavors:

Soy Sauce Cookie
Made with a light dough that incorporates powdered sugar from WAKO Cookie vol.1, this cookie combines three-year-aged soy sauce from a long-established producer in Shimane with caramelized hazelnuts. The result is a nostalgic flavor reminiscent of 'mitarashi' with a perfect harmony of umami, saltiness, caramel sweetness, and rich nuttiness.

Miso Cookie
This variant is crafted from two distinct types of miso: the robust red miso from locally sourced beans and the milder white miso made from domestic rice. Both cookies utilize the same recipe and technique, allowing enthusiasts to compare and appreciate the subtleties in flavor and aroma between them. The conception of WAKO Cookie vol.3 was inspired by Chef Nana Aioka during the prototype development of WAKO Cookie vol.1. By examining the traditional Japanese seasonings encapsulated in 'sa shi su se so,' Chef Aioka ventured into the unconventional realm of pastries, exploring how soy sauce and miso could create unexpected yet delightful flavors. This cookie embodies the charm of Japanese ingredients skillfully interpreted through a Western pastry lens.

About WAKO Cookies
WAKO Cookie vol.1 was an ambitious year-long project aimed at creating a cookie that was "purely delicious." It utilizes rich Hokkaido butter, blending raw and powdered sugars to achieve a delightful texture and melt-in-your-mouth quality. The first volume included 'raw sugar' and 'plain' cookies.
WAKO Cookie vol.2 further delved into flavor profiles, presenting two delicious varieties—Wako black tea and matcha—crafted from premium ingredients such as top-quality Jersey butter from Okayama and carefully sourced eggs.

About the Chef
Chef Nana Aioka is a talented chocolatier and patissier with extensive training from École Tsuji in Tokyo and a successful career at InterContinental Tokyo Bay from 2016 to 2022. Her accolades include awards such as the 2018 BUKO Cream Cheese Contest merit award and the 2020 Luxardo Grand Prix triumph.
