Tokyu Hotels to Showcase Award-Winning Dish Nationwide
Tokyu Hotels & Resorts, led by President Jun Murai, is set to tantalize taste buds across Japan as it serves the grand prize-winning dish from the 23rd Tokyu Hotels Culinary Contest—
'Roast Pork Piccata'—in 35 participating hotels from May 7 to May 31, 2025. Developed by chef Sadayuki Ogata of Cerulean Tower Tokyu Hotel, this delightful dish represents a culinary triumph that highlights the artistry of Japan’s next-generation chefs.
The annual culinary contest, designed to enhance the skills and mindset of aspiring culinary professionals, challenges entrants with specific themes. This year’s focus was on
'Roast Pork', encouraging participants to create a main dish leveraging this key ingredient, along with innovative garnishes and sauces. The dishes were meticulously judged, and Ogata's creation won the gold medal for its culinary excellence.
Ogata describes his dish as crafted to preserve the moist and tender texture of the roast pork. “I aimed to enhance the natural flavors with a creamy piccata style using cheese and egg, paired with a zesty lemon sauce. A salad mixed with shiba-zuke adds a refreshing tartness, perfect for early summer dining. Additionally, premium oils like perilla and olive oil, along with quinoa—often hailed as a superfood—are included, keeping health and wellness in mind,” Ogata explained.
Guests can experience this culinary masterpiece in various forms at participating hotels, whether as a main course or part of a buffet selection. This dish promises to be a centerpiece of flavor that embodies the sophistication of Tokyu Hotels’ dining.
Notably, this is not the only initiative highlighting Tokyu Hotels' commitment to food and beverage excellence. In November of last year, Tokyu held its inaugural
Cocktail Competition for bartenders, and followed up with the
Restaurant Service Contest in February 2025, aimed at the food service staff. These events reflect the hotel's ongoing effort to integrate food, drinks, and services into a unified space of dining delight—a concept collectively dubbed
'Food of Tokyu Hotels'.

Profile of Award-Winning Chef
Sadayuki Ogata
Born in 1996 in Karatsu City, Saga Prefecture
Joined Cerulean Tower Tokyu Hotel in 2014, gaining experience in the main kitchen and the restaurant ‘Caramera’.
Served as a residential chef for the Japanese Embassy in Australia in 2022, and after returning in 2023, was reassigned to the main kitchen.
