On July 19, 2025, YOGANSU Shirakyu, located in Mihara City, Hiroshima, will unveil its next-generation sake known as "YOGANSU no Sake". Embodying the distinct flavors rooted in varying rice field terroirs, this new release marks an exciting chapter for sake enthusiasts.

A Rich Heritage of Sake Brewing


YOGANSU Shirakyu's new line of sake includes four varieties under the VT2024 label, crafted in collaboration with the historic醉心山根本店, the only remaining brewery in Mihara City with a 160-year legacy. The two standout varieties, OKITA9241 and KAWABASAMI8259, draw on the unique characteristics of their respective rice fields, translating these differences into each sip.

Emphasis on Terroir


The name YOGANSU no Sake directly reflects its commitment to terroir, with the product name corresponding to the specific rice field used. This sake is meticulously produced using only the rice harvested from a single field in the given year. This approach allows consumers to experience varying flavor profiles rooted in the terroir and distinct harvest years, making each bottle a reflection of its origin.

About the Rice


The base ingredient of YOGANSU no Sake is the unique crossbreed of Japanese and Italian rice, known as "Wagami Risotto," which is polished to 90% of its original grain weight. This variety is specifically developed for risotto, making it ideally suited for crafting exceptional sake.

In crafting YOGANSU no Sake, only the purest spring water is used. Supplied by a local bottling company renowned for its soft water, the source is situated close to the rice fields in the Yamato district of Mihara City. This adicional layer of meticulousness further enhances the sake's authenticity and connection to the land.

Flavor Profile and Food Pairing


YOGANSU no Sake's flavor is characterized by a crisp acidity and a rich, sweet rice essence, complemented by a lingering bitterness that ties the overall profile together. The aroma is reminiscent of fresh citrus akin to white wine, intertwined with a premium note of rice bran, reaffirming its identity as a rice-based beverage.

This sake is versatile, pairing harmoniously with a variety of cuisines, from traditional Japanese dishes to Western fare.
