On September 13, Palsystem Tokyo held an engaging event titled "Handmade Miso Showcase" right from the comfort of participants' homes. This online gathering featured members who had taken on the challenge of making their own miso, sharing valuable tips and tricks through a digital platform. The highlight was a live cooking session where everyone prepared and enjoyed delicious "Gohei Mochi Miso Grilled Rice Balls." The event was a delightful blend of culinary arts and community spirit, showcasing the essence of homemade miso production.
A Platform for Sharing Culinary Adventures
Thirteen enthusiastic participants embarked on their miso-making journey using high-quality soybeans and koji sourced from Palsystem’s direct supply partners. During the session, each participant proudly exhibited their homemade miso, recounting their unique experiences and stories related to the craft.
After the showcase of their miso creations, the session continued with important tips from instructor Tomoko Yamauchi on the process of "Tenchi Gaeshi," which involves mixing and aerating miso to enhance fermentation. She shared insights on how to manage mold and preserve the mixture to ensure a rich flavor. Valuable nuggets about various types of miso, crafted from rice, barley, and soybeans, were shared, deepening participants' understanding of Japan's renowned food culture rooted in fermentation.
The Role of a Miso Sommelier
Tomoko Yamauchi, the seminar lecturer and a certified "Miso Sommelier," led the event, promoting a diet inclusive of fermented foods such as miso and soy sauce.
