Every piece is created with dedication, and offered at an incredible price of under 200 yen each, enabling an educational environment for the next generation of sushi artisans.

At Standing Sushi ♾️ Eight, we offer a one-of-a-kind approach dubbed “Unlimited Sushi Handled by the Chef.” This allows customers the chance to savor a selection of 15 different types of sushi, all prepared by novice chefs who are honing their skills. During a one-hour session with a strict reservation policy, guests can enjoy the best of seasonal flavors.
Our Menu: Sourcing Freshness
Denoted by a commitment to quality, all fish is sourced directly from the famous Toyosu market every morning. The partnership with Yamaji, a renowned wholesaler celebrated for achieving Guinness World Record for fresh sea urchin in 2025, ensures that we serve the absolute best tuna certified by specialists. The diversity of the menu accommodates fresh seafood, octopus, various seasonal fish, and other hand-picked ingredients, all designed to highlight the true taste of sushi.
Sushi Rice and Wasabi: Crafted to Perfection
We prioritize quality in every aspect of sushi preparation. Our rice, sourced from Fukushima's Koshihikari, is delicately paired with red vinegar from a traditional brewery in Ehime. The craftsmanship extends to the wasabi as well, with only domestic wasabi utilized to achieve perfect harmony among the sushi's essential components.
