A Legacy of Craftsmanship
Founded in 1625, Fukumitsuya proudly represents the rich history and culture of Kaga and Kanazawa. With 400 years of sake brewing experience, the brewery combines the purest natural spring water sourced from the sacred Haku-san Mountain and high-quality domestically produced rice. Adhering to a philosophy of microbial essence, they have evolved into a Junmai sake brewery that produces a variety of products, including organic sake, long-aged sake, seasoning using rice fermentation techniques, functional foods, and skincare products.
The Junmai Red Vinegar is the result of a collaborative effort with the esteemed Imagawa Vinegar Brewery from Kanazawa. Utilizing carefully selected domestic rice, Fukumitsuya employs a unique “static fermentation” method, allowing the vinegar to develop its deep, rich flavor over a period of about three months. This meticulous process results in a visually stunning red vinegar derived from ancient rice.
Innovative Design for Modern Convenience
The revamped Junmai Red Vinegar will now be sold in a 500mL bottle with a user-friendly hinge cap, replacing the previous cork stopper. This upgrade will streamline the opening and closing of the bottle, providing convenience to customers who appreciate quality while cooking.
The Art of Static Fermentation
The static fermentation method, also known as surface fermentation or long-term fermentation, involves allowing natural convection to occur without mechanical agitation. During this process, a natural acetic acid film forms on the surface, capturing and preserving the umami and aromatic components within the liquid. The result is a richly flavored and complex Junmai vinegar, characterized by its fragrant aroma and mellow acidity. Notably, due to acetic bacteria converting the alcohol from the sake into acetic acid, the final product contains minimal alcohol content, making it suitable for general cooking use.
