On September 10, 2025, Haneda Airport will welcome a new culinary gem—"SOBA AZUMINO." This dedicated salt-dashi soba shop is part of the food court known as "Sora chika" located on the first floor of Terminal 1.
SOBA AZUMINO is a fresh entrant from the renowned Japanese soba chain "Azumino," which has gained popularity among travelers and locals alike. Under the guidance of Hiroshi Nagashima, a celebrated chef and recipient of multiple accolades including the Modern Master Craftsman award, the restaurant promises to deliver a unique soba experience that perfectly encapsulates the essence of Japanese gastronomy.
A Culinary Masterpiece
The restaurant's signature dish is crafted using a special salt-based dashi broth that combines the umami flavors of dried bonito and kelp, along with seafood nuances from scallops and shiitake mushrooms. This fusion results in a distinctive "shio dashi" that can only be savored at SOBA AZUMINO.
The soba noodles, made from premium white buckwheat flour, boast a firm texture and a perfect pairing with the salt dashi. Meet Chef Hiroshi Nagashima
The culinary mastermind behind SOBA AZUMINO is Hiroshi Nagashima, who serves as the Executive Chef at Tokyo Airport Restaurant Co. He has had an illustrious career, being honored as a Modern Master Craftsman in 2008 and receiving the Order of the Rising Sun, Gold and Silver Rays in 2018.
Nagashima also serves as a goodwill ambassador for Japanese cuisine and has held various teaching positions, including roles at culinary schools. His commitment to elevating traditional Japanese food continues to inspire many in the culinary field.
