The feedback also included suggestions for using the umeshu in dishes, desserts, and beverages.

Among the selections, the Fuu umeshu garnered the highest praise for its versatility and natural flavors. Chefs noted that it enhances desserts effortlessly, with remarks like “Perfect balance of acidity and umami, with a fragrant aroma” and “Works beautifully in various applications, from fruit confitures to baked goods.” This affirmative feedback underscores the product's potential not merely as a standalone drink but as an essential ingredient in haute cuisine.

Additionally, several chefs expressed a desire for umeshu that serves specifically as a complement to meals, highlighting the gap in the market for umeshu that can seamlessly fit into dining experiences. Inspired by this response, CU9 has now initiated a project to develop an umeshu specifically tailored for food pairings.
