Komedreaming, located in the Hamamatsucho and Daimon area of Minato, Tokyo, has launched engaging experiential workshops centered around rice and fermentation, emphasizing the cultural richness of Japan. Directed by Naomi Shimabuku, CEO of Yui-Maru Co., Ltd., these workshops are now available for corporate clients, organizations, and hotels, providing an ideal opportunity for everyone to connect with the essence of Japanese culture.

Rediscovering the Magic of Rice and Fermentation


At Komedreaming, participants can enjoy not only delicious domestic amazake (sweet rice wine) but also partake in various hands-on workshops that explore the world of rice and koji (mold used for fermentation). The workshops are led by staff who can communicate in English, making them accessible and enjoyable for both Japanese participants and international visitors. This feature allows for a meaningful sharing of Japan's age-old food culture across language barriers.

Onigiri Making Experience with Amazake Tasting


  • - Price: 10,000 yen per person (Approx. 90 minutes, max 5 people)
In this workshop, participants use locally sourced Tokyo rice and ingredients from Tamaki-ya, a 243-year-old established store in the Hamamatsucho-Daimon area. They will learn about the history of onigiri (rice balls) while immersing themselves in Edo's culinary traditions. After creating their onigiri, participants can enjoy a tasting of various types of traditional amazake.

Miso Making Workshop with Amazake Tasting


  • - Price: 10,000 yen per person (Approx. 90 minutes, max 5 people)
Participants will learn to make miso using domestic soybeans, rice koji, and salt. The experience includes a tasting session where participants can sample three different types of miso, highlighting the regional and ingredient differences. Note that the types of miso may vary seasonally.

Matcha Experience Set


  • - Price: 1,500 yen per person
In this session, participants will use a chasen (bamboo whisk) to prepare matcha tea. The freshly whisked matcha will be paired with our signature rice koji amazake, creating a unique matcha amazake experience. Traditional rice-based sweets will also be offered as snacks during this session.

Seasonally Inspired Koji Seasoning Workshop


  • - Price: Starting from 2,000 yen per person
This popular workshop allows participants to create unique seasonally inspired koji-based seasonings, such as tomato koji, Chinese koji, and soy sauce koji. Many attendees become repeat customers due to the appeal of crafting distinctive seasonings.

We participated in the DMO Shiba Tokyo Bay Collection - BORDERLESS 2024 event at the Tokyo Tower's observation deck, Club 333, where more than 50 industry professionals gathered for a 30-minute onigiri making experience, miso-making workshop, and amazake tasting.

Example Event #2: Family Event at Komazawa Park


We conducted a hands-on miso-making workshop for 30 families as part of a child education initiative, offering families an exciting culinary experience.

Example Event #3: Off-site Amazake Sales


During Tokyo Cultural Heritage Week and New Year's Eve, we held on-site amazake sales at the historic Kōdō-in temple, registered as a tangible cultural property. We created and sold limited-label amazake featuring traditional ukiyo-e art to support the conservation of cultural heritage.

Future Initiatives


We have exciting plans ahead, including yoga events at temples, workshops for making sweet red bean paste using fermented ingredients, and tours exploring the history of the Daimon area, in collaboration with DMO Shiba Tokyo Bay and the Minato City Tourism Association.
