Discover Hokkaido: A Culinary Journey at Restaurant Bellustar

Restaurant Bellustar, located on the 45th floor of BELLUSTAR TOKYO, A Pan Pacific Hotel, invites you on an incredible culinary adventure featuring seasonal delights from Hokkaido. From January 6 to February 28, 2026, the restaurant will showcase a special course meal titled "Traveling Through Hokkaido's Ingredients."

As a modern French restaurant, Restaurant Bellustar is renowned for its commitment to using regional ingredients while blending traditional French techniques with innovative culinary concepts. This winter, the focus is on Hokkaido, which is home to a rich variety of seafood and game that thrive in the cold climate. The menu crafted by Chef Munihiro Takesue highlights exquisite dishes that reflect the bounty of the North.

Hokkaido's Treasures: Gourmet Delights

Hokkaido is celebrated as a treasure trove of seasonal delicacies. The "Traveling Through Hokkaido's Ingredients" course features an array of carefully chosen local products. Guests can expect delicacies like fatty, firm-fleshed amberjack, succulent monkfish, and tender Ezo venison. The course will highlight the enriched flavors of aged potatoes, reflecting the region's nature and climate.

An Exquisite Fine Dining Experience

Each dish promises a unique experience, inviting diners to savor the essence of travel through culinary exploration. Chef Takesue states, "The winter ingredients from Hokkaido represent the raw power of nature, combined with delicate umami flavors. We aim to showcase the beauty of each landscape on our plates, capturing the essence of Hokkaido through an innovative French lens. I encourage guests to enjoy this immersive sensory journey."

The menu includes a selection of thoughtfully curated beverages, featuring wines sourced from Hokkaido, remarkable fruit wines made from local haskap berries, and non-alcoholic drinks infused with Hokkaido honey. This range complements the seasonal dishes beautifully.

Sample Menu Highlights

  • - Appetizer: Praline Daikon Yogurt with Amberjack Dashi
The amberjack, lightly grilled over charcoal, is marinated with fish sauce and olive oil, layered with a cashew nut paste to enhance its umami flavors. Topped with a variety of daikon salads shaped like flowers, it’s served with a refreshing sauce of ginger and lime.

  • - Fish Course: Monkfish en Croûte with Ravigote Anchovy Sauce
Here, monkfish is enveloped in prosciutto for a concentrated umami flavor before being baked under a thin pastry. Chef Takesue’s precise cooking delivers a pleasantly textured dish served with three distinct sauces, including a tangy ravigote sauce.

  • - Meat Course: Ezo Venison with Poivrade Sauce and Nara Pickles
Grilled Ezo venison showcases its bold red meat flavor. It’s paired with a mineral-rich seaweed salad and herbed accents, complemented by a traditional red wine sauce and a side of Nara pickles.

  • - Dessert: Fondant au Chocolat with White Edamame
A milk chocolate fondant made with Hokkaido milk is accentuated by mint, accompanied by a celery compote. A scoop of edamame ice cream, sprinkled with a touch of salt, ties the dessert together nicely.

Beverage Selection

  • - OTARUVALLEY BRUSH 2022: A refined dry blush wine from a local Otaru winery, known for its bright, sunset-like hue.
  • - Haskap Sweet: A delightful wine crafted from Hokkaido’s special haskap berries, balancing sweetness and acidity.
  • - Hokkaido Elderflower Soda: This refreshing non-alcoholic drink combines the fragrant elderflower with Hokkaido honey.
