What is the Sushi Kagerou Project?
The name “Kagerou” symbolizes a transient experience, much like the fleeting life of a
mayfly. This project was initiated to nurture young sushi chefs by allowing them to showcase their skills. Over 15,000 customers have enjoyed this hands-on learning experience, which combines tradition with modern accessibility. The sushi is crafted by a team that previously operated
Sushi Asahi, known for its authentic Edomae style, while maintaining a focus on affordability and quality.
With ingredients directly sourced from
Toyosu Market and rice prepared with red vinegar, each sushi piece promises to deliver exquisite flavors. The project emphasizes reducing costs while enhancing the quality of the ingredients, setting the bar even higher than in previous sessions.

The highlight of this experience is the
