Kappa Sushi, part of the Colowide Group based in Yokohama, Kanagawa, is set to launch its 'Kappa's Selected Sustainability Festival' from July 17 to August 6, 2025. This festival will include a lineup of innovative dishes emphasizing sustainability and deliciousness, reflecting the company's commitment to the environment and health.
One of the highlights of this festival is the environmentally-friendly Iyo no Kiwami flatfish, raised through land-based aquaculture methods in Ehime Prefecture. This flatfish, weighing over 2 kg, offers a delectable white flesh that is both safe and sustainable. Priced attractively from 210 yen (tax included), it serves as a great introduction to sustainable seafood. Kappa Sushi aims to promote sustainable marine resources while ensuring safe food for its customers.
The Iyo no Kiwami flatfish dish promises a delightful experience as it is skillfully prepared in-store, highlighting its refined flavor. Another exciting dish is a comparison plate featuring the Iyo no Kiwami, with one piece being grilled with salt and lemon, while another is topped with shiso and salmon roe, priced at 430 yen (tax included). This vibrant presentation allows guests to enjoy the flatfish in two different styles.
Additionally, Kappa Sushi is also introducing the Edo-mae Konoshiro, a lesser-used fish recognized as a 'success fish' due to its name-change through growth stages: Shinko → Kohada → Konoshiro. Despite being abundant in Tokyo Bay, its large size and bony structure limited its market use. Kappa Sushi is addressing this issue by offering a vinegar-marinated Konoshiro, prepared to make it palatable and easy to eat, starting at just 110 yen (tax included).
For those craving a unique fusion, Kappa Sushi’s 'Sustainable Uni Sauce' utilizes uni that may not have ideal coloring but retains excellent flavor. This sauce is made creamy with seafood broth and served with Kappa Sushi’s signature chewy noodles for a delightful texture and taste. Priced at 590 yen (tax included), it’s a creative way to reduce food waste while promoting sustainable food culture.
