The Recipe
Here’s a simple recipe that you can follow to make Kuru Tsu at home. Gather your family, roll up your sleeves, and let’s get cooking!
Ingredients:
- Trehalose: 12g
- Psyllium: 5g
- Sugar: 10g
- Milk: 110g
- Beaten egg: 50g
- Rice flour (for baking): 180g
- Potato starch: 40g
- Salt: 3g
- Dry yeast: 5g
- Unsalted melted butter: 20g
- Powdered sugar: to taste
- Unsalted melted butter: approx. 20g
- Granulated sugar: approx. 40g
- Cinnamon: approx. 4g
Directions:
1.
Prepare the Mold: Wrap an empty can or a cylindrical tumbler in aluminum foil. The size should roughly be 5cm in diameter and 14cm in height.
2.
Mix Ingredients: In a bowl, combine ingredients A until smooth, then add milk and beaten egg. Let the mixture sit for about a minute until slightly thickened.
3.
Combine Mixtures: In another bowl, mix ingredients B and then add the mixture from step 2. Blend well, adding the melted butter last. Cover the dough with plastic wrap and let it rest for 15 minutes.
4.
Shape the Dough: Roll out the dough to about 5mm thick and cut into strips of about 2-2.5cm wide. Wrap the strips around the prepared mold, rolling them slightly on the surface to make sure they adhere.
5.
Prepare for Proofing: Brush the top with melted butter. To ensure the dough doesn’t touch the baking tray, place heat-resistant objects on both ends and let it proof at 40°C for about 10 minutes.
6.
Bake: Preheat the oven to 210°C and bake for 7-9 minutes.
7.
Finishing Touch: Once baked, brush again with melted butter and sprinkle the mixture of granulated sugar and cinnamon on top. Allow to cool before removing from the mold and aluminum foil.
Tips:
- - Make sure to control the proofing time, as excessive proofing can make the dough too soft to handle.
- - Handle the baked dough gently as it will be soft right out of the oven; let it cool before removing.
Enjoy your homemade Kuru Tsu with family and share the wonderful experience on social media!
