Hiyori Co., Ltd., located in Katsunuma, Yamanashi Prefecture, is set to launch its exquisite Japanese vermouth, Hiyori Vermouth, on July 1, 2025. This unique new product is crafted from locally produced Japanese wine and botanicals native to Japan, showcasing the heritage and flavors of the region.

The Birth of Hiyori Vermouth


Katsunuma, known as the ancestral home of Japanese grape cultivation, plays a crucial role in the creation of Hiyori Vermouth. At Hiyori Winery, selected botanicals such as Kihada, a citrus-related tree used as herbal medicine since the Jomon period, and locally sourced Yomogi are steeped to infuse their flavors into the wine. This process is enhanced through the blending of house-made brandy and a sustainable wine pomace extract, resulting in a rich and deep flavor profile, free from synthetic fragrances and colorants.

The product line includes four distinct vermouth flavors:
  • - Sakura (Sweet Vermouth)
  • - Yuzu (White Vermouth)
  • - Lemon (Dry Vermouth)
  • - Kihada (Extra Dry Vermouth)

Hiyori Vermouth is packaged in slim bottles available in two sizes—500ml and 200ml—complete with user-friendly screw caps, making it convenient for restaurants and households alike.
