Meet the Team
Chef Kazuyuki Hakoishi: A native of Saitama Prefecture, Kazuyuki has a distinct Belgian flair in his cooking style. After spending seven years mastering classic French techniques at a Tokyo restaurant, he spent nine years as a sous-chef in a two-star restaurant in Belgium. His return to Japan in 2018 marked the beginning of a new chapter, leading The Chain Museum’s culinary endeavors since 2023.
Producer Ryosuke Kiyotou: Responsible for the seamless integration of service and experience at Butaiura, Ryosuke has an extensive background in fine dining and dessert innovation. He has previously worked on developing popular kakigori recipes at the renowned Japanese restaurant Kurugi, bringing extensive knowledge to the new café experience at The Chain Museum.
