Culinary Extravaganza at The Ritz-Carlton Kyoto
The Ritz-Carlton Kyoto is set to host a remarkable culinary event featuring a collaboration with Chef Noboru Arai from the renowned Michelin two-star French restaurant, Hommage, located in Asakusa, Tokyo. This exclusive dining experience will take place over two evenings on July 17 and 18, 2025, at the restaurant "Chef's Table by Katsuhito Inoue.” This event follows a previous collaboration held at Hommage in April 2025, making it a special return for food enthusiasts.
During this unique collaboration, the two chefs will meld their philosophies and skills to create a one-of-a-kind dining experience. Chef Noboru Arai is known for his innovative approach that blends traditional French culinary techniques with his personal inspirations. Meanwhile, Chef Katsuhito Inoue from Kyoto utilizes the Japanese calendar known as "Shichijun" (The Seventy-Two Seasons) to craft experiences that celebrate the natural landscape and seasonal changes of Kyoto.
Each dish promises to harmonize tradition with innovation, showcasing seasonal ingredients unique to the Kansai region. Diners will be treated to an exquisite menu that fuses the artistic expressions of both chefs. The event provides a rare opportunity to enjoy an extraordinary feast that reflects the distinct sensory experiences cultivated in both Kyoto and Tokyo.
In addition, to commemorate this collaboration, an impressive dish of "Omi Beef Fillet" will be available for one month after the event at Chef’s Table by Katsuhito Inoue. This dish, seasoned with Italian sweet pepper and black seasoning, is a creation inspired by Inoue's time in the Basque region of Spain. Over discussions and exchanges between the two chefs, this dish evolved into a remarkable representation of their joint creativity.
Chef Inoue expressed that, through this dish, he hopes diners will feel the memories of travel and the new possibilities that arise from the conversations between chefs. The evening will encapsulate the interplay of French culinary techniques and the unique characteristics of Kyoto’s environment and seasons, providing a special experience for all.

About The Chefs
Noboru Arai, Chef of Hommage
Born in 1974 in Asakusa, Tokyo, Chef Arai graduated from a culinary school in 1990. He honed his skills at various restaurants in Tokyo and Tohoku before moving to France at the age of 24. He worked at prestigious establishments such as "Le Clos des Sens" and "Auberge La Fenière," where he learned the nuances of French gastronomy. After returning to Japan, he deepened his knowledge of ingredient selection working as a broker in Tsukiji. In 2000, he opened Hommage in his hometown of Asakusa and continues to pursue originality through unrestricted creativity.
Katsuhito Inoue, Chef of Chef's Table
Having trained in renowned restaurants in Tokyo, Italy, and Spain, Chef Inoue took over as head chef at Bulgari Il Ristorante Luca Fantin, which was recognized as the 18th best restaurant in Asia in 2019 by Asia's 50 Best Restaurants and awarded a Michelin star. Since 2019, he has been delivering memorable dining experiences at the Chef's Table by Katsuhito Inoue, respecting and utilizing seasonal produce from Kyoto to provide unforgettable culinary moments.
