The Art of Matcha Production
Matcha is derived from tencha, tea leaves that undergo a meticulous process. Unlike regular tea, tencha is grown in shaded tea gardens, similar to gyokuro, and is hand-picked with great care. After being steamed, the leaves are dried without being kneaded, which distinguishes them from other types of tea. The stem and veins are removed, leaving only the fleshy parts of the leaves. Through a careful grinding process using a stone mill, the unique aroma and flavor of matcha are revealed.
Historically, tencha was stored and transported in pots, allowing it to withstand the summer heat in cool storage areas such as warehouses or ice sheds. The traditional tea ceremony event known as “Kuchikiri,” taking place around November, was named for the practice of opening the pot to reveal the stored tea leaves to guests after the spring harvest. Today, we utilize temperature-controlled storage to ensure consistency and quality throughout the year.
