In response to the current trend of noodle dishes capturing attention both domestically and internationally, Hotel New Otani is presenting two exquisite variations of 'UMAMI SOBA'. The key to its flavor lies in the rich and seasoned Japanese butter, which is perfectly blended with the dashi made from 'Ibuki Iriko', a premium dried sardine sourced from Kagawa Prefecture along with mackerel and kelp.
