Enriched with four types of organic single-origin cacao nurtured in the fertile lands of Ecuador and the Dominican Republic, the dish integrates chocolate mousse with a rich chocolate cream, offering a deep lingering essence of cacao that soothes the soul. About Executive Pastry Chef Michele Abate Marco
Hailing from Italy, Chef Michele Abate Marco has won the Best Pastry Chef award from
Gault & Millau and oversees all pastries at Four Seasons Hotel Tokyo Otemachi. Previously, he has been recognized with five consecutive Michelin stars at the French dining establishment, est. Michele trained at the prestigious
École de Gastronomie Francaise Ritz Escoffier and
École du Grand Chocolat Valrhona, learning his craft in Michelin-starred restaurants in France. He joined Four Seasons in 2020, becoming an essential part of the hotel’s culinary team.
