The "Fermentation Valley Nagano" project was established to promote Nagano's outstanding fermentation culture, which includes miso, sake, wine, soy sauce, pickles, natto, cheese, and vinegars. Formed in 2023, this initiative comprises eight organizations and companies within the prefecture, aiming to enhance awareness of the region's fermented foods and foster sustainable development through events, product development, and information dissemination both domestically and internationally.
The project emphasizes partnerships with tourism and education sectors to ensure the inheritance of this rich food culture for future generations. By collaborating with various businesses and organizations committed to the notion of revitalizing the community through fermentation, they are expanding their impact both inside and outside Nagano.
