The star of the show is the "Fully Ripe Melon Soda Shaved Ice," featuring a rich sauce made from perfectly ripe green melons, blended into a light and fizzy soda finish. Delicately infused with flavors reminiscent of almond and orange, this dessert draws inspiration from the classic French confection "calisson." Meet the Mastermind Behind the Menu


Kazuhiro Hakoishi, the chef at Gallery & Restaurant Buttaiura, hails from Saitama Prefecture and has honed his skills over many years at renowned French restaurants in Tokyo and Belgium. He served as a sous-chef at the two-Michelin-star restaurant "L'eau vive" in Belgium for nine years. Upon returning to Japan in 2018, he took on the role of head chef at "PAVILION," operated by Smiles Corporation, before joining The Chain Museum in 2023.

Ryōsuke Kiyotō, the service manager at the gallery, also brings rich experience. Having trained in traditional Japanese cuisine at “Kurogai,” he went on to create the cafe brand “Kurashi Gashi Kurogai,' known for its popular shaved ice recipes and services, before joining The Chain Museum in 2023.
