SV Roaster W (Wide), a new addition to their acclaimed lineup of heated steam ovens. This marks a significant step forward for Nakanishi, as they aim to cater to the growing demand from large-scale food production facilities seeking advanced cooking options.

Since its inception in 2004, the SV Roaster has been a popular choice in food factories, showcasing impressive and stable sales performances over the years. With increasing numbers of users desiring integration with tunnel freezers, the demand for wider models equipped with capabilities suitable for large-scale operations led to the development of the
SV Roaster W. This oven is designed to utilize high-temperature, superheated steam at 320℃ to cook food quickly while preserving its juiciness.
Super Low Oxygen Atmosphere Cooking
One of the standout features of the
SV Roaster W is its ability to create a super low oxygen atmosphere by filling the cooking chamber with superheated steam, dropping the oxygen concentration to below 0.1%. Cooking within this environment enables the retention of nutrients, minimizes the generation of peroxides, and provides vibrant coloration to dishes by preventing the leaching of pigments from the food materials.
Innovative Re-Jet Circulation Method
The
SV Roaster W employs the Re-Jet circulation method, which ensures efficient cycling of heated steam: from the cooking chamber to the heat exchanger, to the circulation blower, and back. This method not only enhances the heat distribution to the food significantly, thus improving cooking efficiency, but also promotes energy conservation by recycling and reheating the steam. Moreover, adjustments to the convection speed improve the browning process of the items being cooked, while allowing mode switches for versatile cooking operations.
Adjustable Up and Down Airflow
In the new design, the control of air circulation plays a crucial role. The SV Roaster W features dual circulation fans allowing for independent adjustment of airflow levels, optimizing cooking precision based on desired results. For instance, if a crisp upper crust on fish fillets is desired, increasing the upper fan’s airflow can achieve that, while for enhancing core temperature, the lower fan can be boosted accordingly. This granularity in control caters to specific cooking needs effectively.
Modular Capacity
The unit structure of the
SV Roaster W measures 1800mm in length and includes modular connection features allowing additional 400mm units to be attached. This flexibility enables operations to customize their setup, matching the required throughput capacity perfectly — whether a single unit or a multi-unit configuration is needed, scaling up to six connected units is feasible. Furthermore, with a conveyor width of 1500mm, it’s compatible with tunnel freezers, expanding its integrative capabilities.
Upcoming Showcase at FOOMA JAPAN 2025
Nakanishi Manufacturing will participate in FOOMA JAPAN 2025, a major exhibition for food machinery, showcasing their innovative heated steam cooking equipment including the newly revamped
DEECO tabletop superheated steam oven. Though the actual
SV Roaster W will not be on full display, there will be informative exhibits to give visitors a clear representation of its size and capabilities.
