The Exciting Transformation of Universal Bakes into TOKYO VEGAN BAKES in Shimokitazawa
In late August 2025, the popular vegan bakery known as Universal Bakes, operated by SAIKORO SHOKUDO in Setagaya, Tokyo, will evolve into a new brand called TOKYO VEGAN BAKES. This shift marks a significant milestone as it aims to connect with a global network of like-minded individuals striving for a better food future. Following its recent partnership with the restaurant Teible in Dubai, this transformation launches a new chapter for Universal Bakes.
TOKYO VEGAN BAKES will collaborate with Te cor gentil, another notable vegan bakery from Shinagawa, Tokyo, to bring forth an inspiring bakery focused on plant-based culinary delights. Although both brands have been operating in separate locations, they share a common vision centered around improving the future of food. Recognizing their mutual philosophies, these brands will unite to introduce a fresh venture in the vibrant cultural hub of Shimokitazawa, captivating diverse audiences worldwide.
This collaboration has been embraced with delight, and together, they pledge to uphold three central concepts that will guide TOKYO VEGAN BAKES:
1. Providing delicious bread and pastries that are 100% plant-based and vegan.
2. Passing down the value of Japanese ingredients, including wheat, to future generations.
3. Proposing a food culture that is kind to people and the planet.
The aim is to create an inclusive environment where people from diverse culinary backgrounds can gather around the same table, sharing delightful moments and delicious smiles. The ingredients cultivated in Japan are truly exquisite, and the delicate flavors of local wheat and vegetables are national treasures worthy of celebration. By solely using plant-based materials, the natural tastes of these ingredients are accentuated, offering unique flavors that can be enjoyed exclusively in Japan.
