Yuumi Nagashima has dedicated her career to conveying the true essence of fruits, honed through her experience as a news anchor and her work at the Toyosu Market. On the other hand, Chef Hideki Eto has explored the landscapes of Japanese desserts by visiting a multitude of fruit producers across the nation, focusing on how to best highlight the ingredients.

The dish features concentrated mango confit, juicy fruit flesh, layers of brunoise, and semi-dry variations, with a refreshing lemon grass and cardamom jelly. It is finished with a lychee and coconut sorbet, supported by oolong tea biscuit and honey cream, and delicately tied together with the fragrance of orange blossom.
