The Concept of Modern Bistronomy
Sillage represents the fusion of the inviting nature of a bistro with the meticulous artistry of gastronomy, reimagined for contemporary palates. The restaurant embraces the essence of high-quality ingredients from contract farmers, including organic vegetables and edible flowers. These are paired with homemade breads and freshly baked financiers, cherishing a “handmade and warm” feeling in every dish.
Drawing from seasonal ingredients sourced across Japan, Sillage incorporates the cultural practice of fermentation, adding depth and richness to every plate. This approach guarantees that each dish, while grounded in French culinary tradition, retains exceptional finesse and stunning presentation.

Kazuki Munesada, boasts an impressive background, having honed his skills in luxury settings, including Michelin-starred restaurants in Japan and France. His time in Nîmes particularly influenced his philosophy of harmony with nature and utilizing ingredients to their fullest potential.
Chef Kazuki Munesada's Vision
Chef Munesada describes Sillage's name, which means “the lingering aroma,” as embodying the deep fragrances born from fermentation, the warmth of fresh bread, and the aroma of roasted meats and fish. He aims for Sillage to be a place where guests can casually enjoy authentic flavors and scents, all the while delivering little moments of happiness through thoughtfully prepared meals.
Born and raised in Okayama, Chef Munesada graduated from a local culinary school before embarking on his career at the Westin Hotel in Awaji. He mastered classical French cuisine at the Kobe Kitano Hotel and gained advanced skills at the Michelin-starred
Jérôme Nutile in France. After returning to Japan, he refined his culinary craft at
L'ARGENT, another Michelin-rated establishment in Tokyo.
A Cozy and Inviting Atmosphere
The interior of Sillage draws inspiration from the beautiful flora and landscapes of Southern France, seamlessly blending the comfort of plants with modern sensibilities. The design facilitates a relaxed atmosphere for guests to enjoy their meals, featuring a spacious main dining area with a semi-private feel, as well as a private room that accommodates up to six diners. This versatility makes Sillage a great venue for everything from everyday meals to special occasions and business dinners.
Offering Unique Experiences
Sillage is also committed to creating special dining experiences. Plans are underway to host themed dinners and collaborations, including pairing dinners with Japanese sake and guest chefs from France later this year. To celebrate the grand opening, Sillage invites wine lovers to bring their favorite bottles during a limited time event. From October 24 to November 14, 2025, guests can enjoy the flexibility of pairing their cherished wines with crafted dishes without the usual corkage fee.
