Cousins Maine Lobster Expands to San Antonio
Cousins Maine Lobster (CML), a celebrated fast-casual lobster roll brand, is making waves with the launch of its new food truck in San Antonio, Texas. This expansion is a significant milestone for the brand as it marks the eighth unit in the Lone Star State. The new truck, operated by experienced franchise partners Jimmy Shoshani, Ahmer Khan, and Sarah Khan, aims to serve authentic Maine lobster to local seafood enthusiasts.
The San Antonio truck will feature a delectable menu comprising CML's iconic Maine lobster rolls, savory lobster tacos, mouthwatering lobster grilled cheese, and delicious whoopie pies. The introduction of another truck signifies Cousins Maine Lobster's commitment to bringing the freshest seafood offerings to diverse communities across Texas, celebrating the region's rich culinary landscape.
A Journey of Passion and Experience
Shoshani, the franchise's longest-serving operator, joined the brand in 2014 and was instrumental in launching Cousins Maine Lobster in the Las Vegas market the following year. With a successful background in the wine, spirits, and fuel center industries, he transitioned full-time into the lobster business, driven by his passion for seafood and customer service.
Ahmer Khan, a practicing emergency room physician and Dallas native, brings a wealth of operational expertise meanwhile managing the unveiled opportunities within the food truck industry. Together with his wife Sarah, Khan joined forces with Shoshani to expand Cousins Maine Lobster's footprint across Texas, currently running six trucks in major cities including Dallas, Houston, Austin, and Piney Woods.
Setting Roots in San Antonio
“It’s been incredibly rewarding to grow Cousins Maine Lobster here in our home state of Texas and see the amazing response in each market,” said Khan. “San Antonio felt like a natural next step with its vibrant energy and dynamic food scene. We’re excited to join the community and bring the same quality, hospitality, and Maine authenticity that have driven our growth so far.”
Just earlier this year, the franchise partners launched a truck in Oklahoma, marking another step in their strategic growth strategy. The new location in San Antonio aims to capture the excitement of the local market and will officially kick off its opening on August 23rd at Bentley's Beer Garden.
Grand Opening Invitation
Community members are encouraged to join the grand opening event from 12:00 p.m. to 10:00 p.m. at 802 N. Alamo Street. Attendees will be treated to signature dishes including classic Maine fare, New England clam chowder, and, of course, CML’s renowned lobster rolls and whoopie pies.
Looking Ahead
As Cousins Maine Lobster looks toward the future, it continues to seek passionate operators ready to provide the highest quality food and customer experience. Their business model supports rapid entry into new markets with potential operators able to launch food trucks within three to six months, making it an appealing opportunity for those looking to get into the food service industry.
The brand is currently identifying expansion opportunities in areas with high demands for quality seafood, particularly targeting locations in California, Arkansas, and regions throughout the Midwest.
