After a year of dedicated development, RYUS NOODLE BAR Tokyo Craft, known for its chicken paitan ramen originally from Canada, has launched two innovative varieties of tsukemen. This unique addition showcases the creativity of a brand that is not only rooted in Japanese cuisine but also influenced by exotic flavors from Canada.
About RYUS NOODLE BAR
Founded in January 2024, Prime-I Co., Ltd, based in Chuo-ku, Tokyo, operates RYUS NOODLE BAR Tokyo Craft and offers a range of services including restaurant management and consulting. The original RYUS Noodle Bar was established in Toronto in 2013 by Ryuichiro Takahashi and gained fame for its delicious and distinctive ramen. It participated in the Shin-Yokohama Ramen Museum in 2018 and again in 2024, attracting long lines of customers eager for a taste of authentic chicken paitan ramen.
When introducing the Tokyo Craft location, Prime-I aimed to adapt the original flavors to better suit Japanese tastes, especially through clearer flavor profiles in the new menu. The main offerings include the veggie paitan ramen in three varieties: shio, shoyu, and miso. Additional dishes such as tsukemen, tantanmen, mazemen, and abura soba have also been developed using chicken paitan broth.
Introducing Tsukemen Flavors
With the new launch, RYUS NOODLE BAR offers two unique tsukemen dishes:

Porcini Cream Chicken Paitan Tsukemen (Miso)
This dish features a rich cream sauce infused with porcini mushrooms, paired with miso chicken paitan soup. The addition of enoki mushrooms and truffle soy sauce enhances the dish, creating a seasonal flavor profile reminiscent of autumn. The robust taste is perfectly complemented by diced chicken chashu, providing a satisfying bite with each meal.

Shrimp Tomato Cream Chicken Paitan Tsukemen (Shio)
A novelty for the establishment, this dish utilizes lobster along with a tomato cream sauce combined with a shio chicken paitan broth. The shrimp brings a new seafood element to the tsukemen experience, complemented by marinated onions, tomatoes, and aonori for a delightful textural contrast and flavor enhancement.
In addition, the restaurant has developed a special
risotto rice that can be used after enjoying the tsukemen. Cooked with a Japanese rice cooker, the rice is topped with parmesan cheese, basil, and parsley. By mixing this rice into the leftover broth, diners can savor a cheesy risotto at the end of their meal, making the tsukemen experience even more enjoyable.
