A New Beginning for Auld Alliance at Cloudland Resort
Cloudland at McLemore Resort in Northwest Georgia proudly announces a fresh chapter in its signature dining experience, Auld Alliance. This unique restaurant, known for being the only Scottish-French cuisine establishment in the U.S., has partnered with SAVOR, the innovative food and beverage division of Valor Hospitality, to elevate its offerings to new heights.
Since its opening in Spring 2024, Auld Alliance has made a mark by creatively blending the rich culinary traditions of Scotland and France. As its name suggests, it’s a nod to the historical alliance between these two nations, and the restaurant has successfully integrated this heritage into every aspect of the dining experience.
The new seasonal menu is a product of collaboration between SAVOR's talented Scottish chefs, each with classical French training and impressive international experience. Leading this culinary endeavor is Matthew Gray, who has previously worked at the prestigious Inverlochy Castle Hotel and Chez Roux in Houston. Not far behind in acclaim are George Jardine, known for his work under Michelin-starred chef Jean-Christophe Novelli, and Roy Brett, a sustainability champion and Chef of the Year in Scotland. Together, they have crafted a menu that showcases a blend of technical skill and bold flavors, making full use of locally sourced ingredients from farms in Northwest Georgia.
Matthew Gray, speaking on behalf of SAVOR, emphasized the importance of a strong culinary identity. “At SAVOR, our mission is to develop concepts that resonate at a high level,” he stated. “Auld Alliance already possesses a clear vision, and our goal is to reinforce that foundation through talent, sourcing, and consistency.” The team has meticulously fine-tuned the dining rhythm and service elements to ensure an effortless yet memorable experience for each guest.
Exquisite Flavors and Dishes
The renewed menu launches with standout starters like the Jumbo Lump Crab served atop a Buttered Crumpet, drizzled with malt vinegar mayo and garnished with caviar and chives. As a centerpiece, the Whole Lamb is featured in various preparations, from hay-baked shoulder to Scotch pie and succulent chops with Asher Blue cheese. To finish the meal, guests can delight in the Cranachan Iced Parfait, a nod to traditional Scottish desserts layered with whisky-macerated raspberries and toasted oats—a fitting conclusion to this culinary journey.
Chef de Cuisine Christopher Cofiño described their focus as one of refinement rather than reinvention, stating, “We focused on technique, clarity of flavor, and sourcing the best ingredients.” The collaboration with local suppliers such as Gowin Valley Farms and Rosemary Thyme Creamery ensures that the menu not only honors Scottish and French culinary practices but also celebrates the local produce.
In addition to the revamped menu, Auld Alliance has launched The Tasting Room. This private space offers guided experiences centered on Scottish whiskies, gins, and exquisite French wines and champagnes, creating the perfect pre-dinner addition to enhance the culinary adventure.
Enhanced Beverage Program
The beverage selections have undergone a transformation as well, with a newly curated cocktail menu and regional wine offerings, guided by Auld Alliance's recently appointed Sommelier, Ruth Verijnikova.
Additional enhancements to the dining atmosphere include improved comfort in the dining area, custom McLemore tartan accents for staff uniforms, and comprehensive staff training focused on classic French service techniques.
