- - Cold Starter: One begins with a refreshing dish featuring the Fukushima-produced maple salmon, delicately cooked to preserve its texture and infused with a hint of sakura fragrance. The accompanying vinaigrette, with its bright acidity and subtle sweetness from sakura blossoms, sets a vibrant tone for the meal.
- - Warm Starter: Next comes the Yamagata beef tongue and 'Inca no Mezame' potato omelet, harmoniously paired with a bitter yet balanced rapeseed sauce, emphasizing the depth of flavor in each bite.
