Experience the Magic of Koji at Isetan Shinjuku
Koji Style, a company celebrated for its innovative approach to Japanese fermented ingredients, is set to hold an exciting popup event at Isetan Shinjuku, from December 17 to 25, 2025. Partnering with Harita International, this event will take place in the Beauty Apothecary on the basement floor of the main building.
What’s in Store at the Popup?
During this limited-time event, attendees can explore a range of products designed to make Koji cooking accessible and enjoyable. The star attractions will be the 'Make Your Own Koji Seasoning Kits,' featuring a unique blend of spices and Koji – a traditional Japanese fermented ingredient.
Make Your Own Koji Seasoning Kits
- - Kit A: Includes yellow brown rice Koji, black barley Koji, and Sri Lankan vegetable curry powder, priced at 3,643 yen (tax included).
- - Kit B: Features yellow white rice Koji, yellow brown rice Koji, black barley Koji, and cinnamon powder, priced at 5,362 yen (tax included).
Each kit allows you to dive into the world of fermentation and seasoning at home, enhancing your culinary repertoire.
Individual Koji Products
In addition to the kits, Koji Style will offer individual Koji products, each weighing 120g and available for 1,020 yen (tax included):
- - Yellow White Rice Koji: This basic Koji brings out the gentle sweetness of white rice, making it ideal for beginners. Perfect for creating classic seasonings such as salt Koji and sweet rice wine, its finished flavor is soft, enhancing the taste of various ingredients.
- - Yellow Brown Rice Koji: Known for its rich depth and fragrant aroma, this Koji contains more umami compounds than white rice Koji. When fermented, it evolves into a flavor reminiscent of miso, making it great for pairing with sashimi or boosting soup flavors.
- - Black Barley Koji: Combining the nutty aroma of barley with citric acid from black Koji mold, this unique Koji develops a harmonious taste of sweetness, acidity, and savoriness. It pairs excellently with spices, making it perfect for curry and meat dishes.
