Tokyo Prince Hotel, located in Minato-ku, Tokyo, has announced the availability of its award-winning cocktail 'Ensemble', created by bartender Shun Sato. This cocktail celebrates culinary creativity, earning both second place and the 'Best Food Pairing Award' at the 12th HBA/Kokubu Cocktail Competition in 2026, co-hosted by the Japan Hotel Bartenders Association (HBA) and Kokubu Group Holdings.
The Craft Behind 'Ensemble'
Shun Sato, a bartender at the hotel's Main Bar Windsor, crafted 'Ensemble' as part of the competition theme, focusing on pairing cocktails with food. Despite holding a position in the Financial Control Department at the hotel, Sato pours his passion for mixology into this award-winning creation. His journey began in 2017 when he joined Prince Hotels and has since included training at The Prince Gallery Tokyo Kioicho's bar, obtaining bartender qualifications through HBA, and competing nationally.
A Cocktail Inspired by Mythology
'Ensemble' draws inspiration from the legendary cocktail 'Adonis', paralleling the myth of the youthful god with its rich blend of flavors. The cocktail features white wine, flavored with herbs and spices, creating a complex profile with a refreshing finish. The addition of Mediterranean herbs and a unique powdered fennel rim enhances both the drink's aroma and the dining experience, making it a perfect accompaniment to various dishes. This delightful drink strikes a harmonious balance between sweetness and herbal freshness, poised to invigorate the senses.
