medicine cuisine to life with its new
Winter Spicy Collagen Hot Pot. This dish features a deeply nourishing broth infused with collagen and a captivating blend of nine invigorating spices, including Sichuan peppercorns and star anise. Diners can indulge in a variety of fresh ingredients, including white fish, shrimp, chicken dumplings, Matsusaka pork, and succulent herb-fed beef from Tokachi, all beautifully complemented by an array of locally sourced vegetables.
The hot pot experience is enhanced with classic accompaniments such as dried tofu skin, fried breadsticks, and the traditional
yuba to soak up the umami flavors of the broth. Guests can choose between the spicy broth or the mellow, collagen-rich
white soup, simmered for hours to extract maximum flavor. To round off the meal, the sweet potato vermicelli adds a delightful texture and absorbs the sumptuous essences of the soup.
