Fuji Soba Introduces Tsukimi Uma-Niku Soba
Fuji Soba, a well-known standing soba restaurant chain established in 1972, is set to unveil an exciting new dish starting September 1, 2025. This new offering, called Tsukimi Uma-Niku Soba, is the brainchild of Chef Shusaku Toba, the owner of the acclaimed restaurant sio located in Yoyogi Uehara, Tokyo. With a reputation for providing high-quality soba, Fuji Soba operates 105 outlets primarily in the Tokyo metropolitan area.
Fuji Soba takes pride in serving fresh, hand-made soba. They source ingredients such as "nama soba" that is delivered daily, and they prepare their dashi (broth) from scratch in-house, ensuring a meal that is both fresh and flavorful. With a commitment to quality, Fuji Soba is known for its crispy tempura that is fried on the spot, delighting customers with every bowl served.
The Tsukimi Uma-Niku Soba features tender meat braised in a sweet and savory broth, generously heaped on top of the soba. The dish is finished with a topping of the highly popular "Beni Shoga Tempura" (red ginger tempura), delivering a scrumptious combination that creates a satisfying and hearty meal. The balance between the sweet and salty meat, the richness of the egg, and the tanginess of the tempura creates a divine experience that keeps diners engaged with each bite. Additionally, customers can enhance the dish's flavor by adding spicy oil provided as an accompaniment, allowing for a kick of heat that transforms the taste.
In tandem with the soba, Fuji Soba will also offer a rice dish called Uma-Tanuki Meshi, featuring fried bits and sauce, available as a set. A representative from Fuji Soba remarked about the dish color and preparation, highlighting, "The meat used in Fuji Soba's dishes is known for its bright color.
